Chewy Chocolate chip cookies

Some of you were looking for a awesome chocolate chip cookie recipe. Well I got this one from my mother in law and these are to die for and stay soft even after freezing and defrosting!!

1 1/2 cups margarine softened
1 1/4 cups white sugar
1 1/4 cups packed brown sugar
1 tablespoon vanilla
3 eggs
4 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1 (24 ounce) package of chocolate chips (4 cups)
*you can do half white chips and half brown (which is amazing) or even add nuts.
Heat oven to 370 degree's

I just throw everything (except the chips) into my kitchen aid mixer and let it do its thing until all mixed together then add the chocolate chips in last and blend. But if you don't have one...

Beat butter, vanilla, sugar's, eggs, salt and baking soda in large bowl with electric mixer on medium speed, stir in flour.
Stir in chocolate chips.

Then I use this (picture below) small scoop to scoop onto pan. They are the perfect size and all come out evenly sized.
Bake about 6-8mins. Cool 1 to 2 mins then remove from pan.
They may not look cooked but trust me, don't let them stay in longer then 8 mins. As they cool they will settle and look delish but stay oh so soft! I even froze a bunch before and when you bring them out and defrost them, they are still as soft as can be!!
